Curried Aubergine with Avocado

Curried aubergine, with avocado, is an alkaline recipe that tastes great with vegetable salads. It is really delicious. Aubergine is also known as eggplant or brinjal.

1 small onion (chopped)
1 clove garlic (minced)
1 teaspoon turmeric
1 teaspoon garam masala
1 aubergine (peeled and cubed)
2-3 tomatoes (skinned and chopped)
half cup (125 mls) yeast-free vegetable stock
1 avocado
sea salt to taste

Curried Aubergine with Avocado


  1. On medium heat, lightly fry the onions, garlic, turmeric and garam masala.
  2. Add the tomatoes and fry until cooked.
  3. Add the vegetable stock, aubergines and sea salt and simmer for about 10-15 minutes.
  4. When done, scoop the aubergines into peeled and stoned avocado halves.
  5. Eat with a large green salad.
