Curried Aubergine with Avocado
Curried aubergine, with avocado, is an alkaline recipe that tastes great with vegetable salads. It is really delicious. Aubergine is also known as eggplant or brinjal. 1 small onion (chopped) 1 clove garlic (minced) 1 teaspoon turmeric 1 teaspoon garam masala 1 aubergine (peeled and cubed) 2-3 tomatoes (skinned and chopped) half cup (125 mls) yeast-free vegetable stock 1 avocado sea salt to taste

- On medium heat, lightly fry the onions, garlic, turmeric and garam masala.
- Add the tomatoes and fry until cooked.
- Add the vegetable stock, aubergines and sea salt and simmer for about 10-15 minutes.
- When done, scoop the aubergines into peeled and stoned avocado halves.
- Eat with a large green salad.
